A cartage docket records the sender (quarry or site), the receiver (customer or destination), docket number, date, truck rego, driver, material (VENM, fill, sand, rock, etc.), load count or per-load times, and signatures from driver and site foreman. This generator covers all of them.

How is this different from the US haul ticket tool?

Same generator, different terminology and example data. The Australian variant uses "docket" instead of "ticket", "spoil" instead of "dirt", metric-friendly material names (VENM, recycled concrete, road base), and Australian address examples.
